I agree that pacing and judging how much is left of a project is a skill that many students lack. I think that the best we can do is to set the interval progress check points and provide a mixture of time in class (to ensure access to help and resources) and time out side of class. I have been frustrated by a similiar situation in the past. I do not have a super clear solution to the problem but keep searching every year. Hope that helps some that you aren't the only one in that position when it comes to project completion.
